I want to replace my 50 mm depth Giant SLR 1 wheels because I find them heavy and not stiff enough. Which pair could you recommend for less than 800 USD ?

You got so many options.
Leon from Yuanan on the forum (OEM for Elite)
Farsports is never a bad idea, email sales directly (dont use the website, they can make you nice wheels with cheaper hubs for eg)
Peter from Carbonspeed on the forum (the factory that makes the pinarello grevil clone that had a give away a couple of weeks ago.
And the list goes on.
I've (happily) bought wheels from Peter & Farsports, and i am likely to buy wheels from Leon next.

I suggest you go for full T800 (avoid T700), and use sapim cx ray or pillar wing 20 spokes (avoid cheaper spokes).
I'm yet to see any evidence that branded hubs roll faster in any material way, so i'd say, get novatec / bitex / house hubs and save yourself some cash.
Ceramic bearings are pointless mechanically for bike applications, and wear out faster.
Hubs do need maintenance, especially if you ride in wet / gritty conditions.
Putting extra grease in a noisy hub does quiet it down, it takes 2 min, and it's game changing.

Fast on the flat. And nowhere else.

I am using Elitewheels Edge 65mm (1540g with steel bearings, ceramics are a touch lighter but to me they are not worth the price difference) and am very pleased with the overall performance. They are very laterally stiff; they do not move (bend) when side loading force is applied (pushing or pulling with the hand) unlike my previous Shimano C50 wheels which would touch the seatstays if there was not the rim brake to stop them (they did rub in out of the saddle efforts) and felt like boat anchors. For how deep they are, they are climbing very well. On a flat push they feel amazingly fast and pick up speed very well once you get past 33-35 km/h. Are sensitive to side winds but nothing too terrible. If you are into loud hubs, you will love them, I know I do. I can only recommend them, but I have limited wheelset experience. For the price especially on sale with cupons on Ali, you can't go wrong.

-Farsports/Wheelsfar Hyper line of wheels with carbon spokes. 24mm int / 30mm ext. $850. Custom wheels so you'll have to wait 3-6 weeks.

-Magene EXAR UltraDark 508. They are $1000 but come with carbon spokes, 23mm int / 30mm ext. Discounts do exists to a little bit more money.

Carbon spokes make a difference when sprinting or climbing but does it really make a difference when we ride for a cruising speed at 30-35 km/h ?

I also just ordered a 6 spoke gravel wheelset from Leon (Yuanan). Great prices. I can't vouch for quality just yet as I'm still waiting for them, but it's essentially the same wheelset as the Elite Drive Gravel 6 and the reviews on those are pretty good.

Other than what has already been mentioned, I think your wheelset is already pretty solid and you'll be hard pressed to find a real "upgrade" under 800. I think if you open up your budget to ~1000, there will be many more options that will feel like a real upgrade (Magene, Light Bicycle, 9velo, nice Farsports options, etc).

I have these wheels, riding in hilly/mountain terrain in Knoxville TN, USA. Rough roads here and have had no durability issues.I recommend the wheels, but carbon spokes do make for a harsher ride quality. Think about if you care more about going fast or comfort. If you care about comfort, choose metal spokes.9Velo is a good option
