MTB cranks have different spindle lengths/chainlines and Shimano crank spindles only detach on one end so you can’t just get a different length one like you could for, say, Raceface Cinch. AFAIK it’s not possible to get the chainline you stated with MTB cranks.
Typical MTB BBs are also 73mm whereas typical road/gravel, and the 707 specifically, are 68.
Chainline precision matters a little less with 10/11spd drivetrains on MTBs, particularly gravity bikes, but with one that’s constantly being pedaled and shifted you’re really going to want to have the angle correct.
