Found a YouTube video showing several Fatbikes from one of the recent bike shows.  None were Chinese carbon but if you are getting ready to build a Fatbike the video may give you some ideas for component choices.

Oh man, Scott's got a fatty now? Good thing it's not carbon or my wife (who has had five Scotts at this point) might actually be interested.

*sigh* I hope mine ships soon! Whole buncha Blutos in that video, pretty sure I'm gonna be happy I went that route.
