My rear shifter cable seemed to be a bit short, so I bought a longer one, but i am now struggling to replace the new rear shifter cable.
Any advice?

hi
Here are some instruction regarding the sensah empire
http://www.disraeligears.co.uk/Site/Sensah_road_drive_train_system_-_instructions_scan_1.html (http://www.disraeligears.co.uk/Site/Sensah_road_drive_train_system_-_instructions_scan_1.html)
I changed my front derailleur cable, It was not super easy but not complex.
Peal off the rubber cover.
Push the cable, it will pop out on the inner side of the shifter.
(make sure you are on the position where cable should have no tension : lower gear)
put the new cable in place and push will while helping the cable to follow the shifter meacnism curve (that's the boring/ difficult aspect).
hope this help
