Title: Dirt cheap GR02 flat bar build or built Canyon Roadlite?

I want an around town bike (mainly to ride to the gym but also do light grocery runs) and I'm torn between a build or just getting a cheap touring bike

I do like the look of the GR02 and I figure with a cheap MTB groupset and alloy wheels I might be able to squeak the build under like 700. Though I would love a little weight weenie love with carbon wheels & bars. Is it possible?
