I am doing a gravel build and the fork that came with it is bad (thru axle is out of alignment). I just need a generic disc fork with a 1-1/8" tapered steerer and clearance for maybe 45c tires. Can I just grab something like a Toseek/Bucklos etc? Do I need to worry about offset? This is just a "townie" build. I would like something with rack mounting points if possible.

I just did that a month ago. The disc brake screw mount on my old fork stripped, so I picked a up a carbon gravel fork on Amazon. Though if I wasn't in a rush, I'd order from AliExpress. I did get a gravel fork with a 50mm offset and I think it gives a tad more clearance than a 45mm offset fork if you have toe overlap.
