Would love to build a bike, either full suss or rigid, but at 188cm and 120kg am I a bit too big for a carbon frame?. What frames and size would people reccomend?

I wouldn't say so. I'm around 190cm and 100kg. I just wouldn't select the lightest frames - probably stay away from the CS-256, but the CS-057 (http://www.xmcarbonspeed.com/Productinfo.asp?f=1296) is well proven and would probably suit you just fine. In terms of a full sus, the CS-036 (http://www.xmcarbonspeed.com/Productinfo.asp?f=1296) is also well proven on these forums.
Also skip the extra light wheels. :D

Honestly, if you get seriously into MTB you will loose weight steadily. This year I lost 1 kg/month over the 6 month of intense training prior to my key race. And I really had not planned on loosing weight, I was in the norm and am now fit.
So, just go for it!
