Re: How addictive is bike building?! Wheelbuild has been phenomenal. 1320g for a set of 50/55mm deep/28mm wide wheels, steel spokes. I'm planning to make a dedicated post detailing the adventure soon, as well as some tips and tricks. Lots of time invested though.

Haven't got a suggestion for ali but they're very easy to make with a threaded rod and some nuts and washers.

For bearing I always use freezer.
Let the bearing in the freezer for 10/15minutes, it will become slightly smaller and you can insert by hand in the hub shell.

Never use hammer for new bearings

Re: Which Chinese saddle did you end up picking? I almost feel like you have to buy several saddles before you find the right one. On top of that, you need to make sure you get the height, distance and angle that works for your fit and riding style.
