I think i'll go for the building my own wheelset decision after your comments.
I have some of the tools required.

Any recommendations on who to get a rim from? Since i'm running tubeless I don't want holes so I don't have to run rim tape.

Did you see the trick to drive the nipple with a spoke bit and a magnet?
It's fiddly at start, but after a couple of nipples it is very easy.

As @jefflinde suggested, building wheels is intimidating but not that hard.

Not sure if you can get a pair of carbon rims for less than $200-300 shipped, so this is a start.
Then some DT-Swiss clones hubs, that get better and better for $80.
And Pilar spokes, even some aero. The only luxurious parts I would choose are the nipples from SAPIM.

And some readings and practice and you'll have nice wheels for less than $500.

I noticed no difference really.  Maybe a bit smoother. But likely placebo. I think it's a looks thing.  And weight.

On the (now old) AXS derailleurs, The only difference between XX1, XO1, and GX are color/finish and lower cage material.  The actual mechanism is identical.  So the lower cage material is what explains the weight difference between each level. And there's an approximate 70 g difference between XX1 and GX.  Any of these aftermarket oversized pulley cages will lighten the GX to be the same weight as the XX1. And for considerably less than the XX1.

I bought long time ago these fancy pulleys, but they didn't last long, literally eaten by the chain fast.
Are they more resistant now ?

The only replaceable parts I can think of on a hub are bearings, the ratchet rings and the freehub body, all of which should be easy finds from third party, I don't think they are proprietary?

Are you sure they are interchangeable ?
Did you try that already ?

Zeroing crankset is selling for about $50 USD with discount. Any opinions on this style of crankset that uses this locking method for the non-drive side crank arm? Any idea on the torque specs as well for the left crank arm? ...

The crankset look great.
Strange they call their 24 alloy shaft: hollowtech(24mm steel shaft) as well as GXP(24/22mm steel shaft, infamously squeezing the non drive bearings)

Is it a 3-bolt interface with the chainring, like SRAM cranks ?

From the stuff I've seen that others have bought:  jerseys still crap, newest bibs good - provided the chamois suits you.

I did order two jersey without collar last year, and find them still great.
I tried a bib, for short rides it is ok, for longer not.

Yeah, plenty ... that I've helped to build  obviously ::) in the various clubs I ride with! By word of mouth.
And now they are making kids too.
Some see the bikes, talk to the owner, get convinced, and build one by themselves, especially if the builder has a good presence on Youtube, like Winspace, Trifox, Yoeleo,... These are overpriced stickers to me, but it gives them more confidence to jump.

Finally got the 1x11 GR9 installed, but I think I have a faulty shifter. Can’t get the indexing right and it seems to miss shifts.

If you detach the cable from the derailleur, give some tension with your hand on the cable, and try to shift.
Is the cable moving freely in both directions(shift/unshift) ?

The can fix worked for me so far. Hoping it doesn’t cause a slip and drop the seat post. Guess that’s the price we pay buying open mold.

Not sure this will age well, since these are two different materials under a moving load.
I'm always astounded how tolerant many are with Velobuild quirks, and settle on workarounds.
