Look no further than sunshine/goldix imo. I find them better than stock shimanos. (sunshine 10s 11-40 on mtb and goldix 11s 11-40 on gravel)

I wouldn't necessarily call them fake as they are not actively trying to deceive you like the fake shimano chains. I bought a sunshine 11-16 cassette for my gravel bike, but ended up going with a tried and true sunrace cassette just to minimize potential headaches. I'll keep it as backup just in case.

Not super scientific, but I go by tooth profile and overall performance. Compare what the teeth look like vs what they're supposed to look like. If there's a major difference, it might be time to change. Or if indexing is getting nearly impossible, its probably time to change it as well.

Note that chains and cassette will wear together, so sometimes its necessary to change both at the same time.

Personally, I will never use YBN brand again.  The YBN chains I purchased off of Aliexpress a couple years ago, stretched and wore out in a couple of months.  They must use some sort of very soft elastic metal. 
For my riding, the most affordable and longer lasting chain brand is KMC.

Are you sure they were legit YBN chains? Only recently did I learn how to spot fake shimano chains. I'd have no idea how to check if a YBN chain is the real deal or a fake.

The first number is the length. Depending on how the axles fit now, you could deviate a little but that is for you to decide...
The rest is the thread. I guess the last number is the length of the thread, so you could go for more or less thread depending on the length of the axle... If you go for a slightly longer axle (few mm's) you will need longer thread of else the thread will run out before the axle is tight...

I understood the measurements, just wasn't sure which ones to prioritize. These seem like they'll do the job. I honestly prefer axles without the lever. Aesthetics I guess, but if I can't find something that works I'll definitely get these.

I'm looking into replacing for sure. They seem to have strange dimensions. How exact do thru axle measurements need to be? Are some measurements more important than others?

Can't find anything that matches perfectly.
Axle specs:
Front- 120L M12 P1.5 L14
Rear- 173L M12 p1.5 L15

Did the replacement shifter work much better than the first?   I just installed my shifters and am having similar bad shifting.

Its still tricky to get dialed in, but yes it absolutely solved the shifting issues I was having. No matter the adjustments made, couldn't get it indexed properly. Fortunately my mechanic had a spare shimano shifter sitting around. We tried the shimano one and it helped identify the shifter as the problem. Rear mech was flawless with the shimano shifter.

Are all the shifting "complaints" due to the Campagnolo style shifting vs. Shimano? Or is the thumb trigger really hard to use?

Possibly.
I rode campy on my road bike, so that wasn't a big adjustment for me.

100 mile update.

Frame hasn't exploded yet.
Ltwoo GR9 group is not bad. Might upgrade shift cable to something more premium to see if it makes shifting better.
Senicx GR3 crankset has been solid. Used a shimano bb instead of the stock one. No creaking and runs smooth.
Replaced Toseek stem for a shorter one I had laying around to adjust fit. Might order a "nicer" one soon.
Mixed saddle is comfy enough. I've taken some serious hits on bumpy roads and its held up well.
Toseek seatpost gets the job done. Not much to write home about. Not the lightest since it uses metal fittings instead of carbon, but I prefer sturdiness over some grams saved.
45mm WTB Riddlers are ideal for my terrain. Not overly aggressive, but just the right balance of grip and rolling resistance.

My two gripes so far:
1. Rear does have flex when pedaling standing up. Not much to do about it really. For the price of the frame, I should've expected some flaws.
2. Thru axles use an 8mm allen wrench/hex key. Why?? None of my current multi tools have an 8mm so I either have to find one with an 8mm or carry another allen wrench. Also, the allen wrench can't go in beyond maybe 10mm or so. So all the torque is on a very small part of the shaft. May not be an issue, but just a bad design choice imo.

100 miles on my GR9 set and its...ok. Braking is great. I accidentally did the "squeeze without wheel" thing mentioned above totally on accident when removing my bike from the car rack. Now my front brake grabs really well lol!

Shifting is ok. Shifts to harder gears nicely, but is struggling to move to bigger cogs. I think the cable is stock shifter cable fully stretched now and some fine tuning on the indexing will make it much better. I'm wondering if upgrading the cable will improve performance.

Still getting used to the ergonomics of the ltwoo hoods. Might just be my fit that needs some slight adjustments.

I used this one from Amazon. It’s not full frame coverage, but it was one of the few “matte” options. Not as glossy as regular helicopter tape.
Covered the whole bottom of down tube, top of top tube, inside of fork, and back of seat tube.
