I’ve never gone the bare carbon route with saddles. Prefer the ones with minimal padding though.

Never seen that. Perhaps because they're not mainstream there isn't a big enough market for them. And with the quality of mtb forks we see, probably not worth the risk anyway. Suntour GVX might be your best bet.

I have seen suspension stems and seatposts however. Knockoffs of the redshift stem and suntour seatpost can be found on Aliexpress. Those might be better options for adding suspension to a gravel build.

Having looked at EU Amazon they are actually the same price or more expensive than real Chester's

Oh wow. Thats wild. The fookers are $26 and Chesters $49 stateside. Definitely wouldn't pay over $30 for fookers.

I've used Fooker (Raceface chester knock offs) and they were great. Fooker also makes aluminum pedals, but I can't give personal experience on them. Amazon reviews are pretty good.

The primary issue is that the ergonomics are still pretty substandard - looking at the experience of people on YouTube you can't reach the thumb shifter from the drops (and compared to a Campag lever it's much further forward). I would wait until the new stuff rolls out and see if they bring it down for 12/11 speed mechanical as they look have copied the Campag Potenza/Centaur droopy thumb lever which is much better positioned than the current version.

From the looks of it, you may not even be able to comfortably reach the thumb shifter from the hoods! I remember that issue from the old Sora I started on back in early 2000's.

Welcome to the dirt life. I transitioned from road riding a while back. Started on a cheap hardtail. Used that experience to figure out what I wanted in my full sus bike that I immediately started saving up for. I learned about all the various standards and types of mountain bikes in that time. It helped me immensely. Mountain bikes are much more complex than road bikes.
I toyed with the idea of building up a Chinese full sus frame but after build costs or buying the right tools, it was easier to buy a one locally.

So if you haven't yet, factor in costs for tools you may not have.

I'm curious about metal gravel frames as well. Not much cheaper than the carbon options once you figure shipping costs. These two have my eye, but I can't find any deep reviews on them.
