Ride them anyplace you ride MTB.... I actually rode my Road bike with 28mm slicks on the same trails, well, many of the same trails, would have done more if I had mtn pedals vs road pedals.
Whenever I build a gravel bike, I will ride it on all the same trails I would normally mtn. After all a 40mm tire is approaching late 80s early 90s mtb tire sizes. Overall geometry and components will probably make a modern gravel bike more capable than my 1992 Bridgestone MB-2 mtn bike. (Only use that occasionally to remind me why I have new bikes)

Nice new bike. Gravel will be my next bike, but easily a year out and actually thinking of building a lugged steal frame next year.

Looks like some options for a dropper post. Wonder if you can request no front mech mounting and holes.
Can we see tire clearance? Would a 42 fit?

At the time, the Ican wasn't really out there yet. He ended up with a Santa Cruz Hightower 27.5+.
I think an Ican P9 would be the choice, but not sure if it will take plus tires.

Tools will mostly be standard. Allen wrenches, torque wrench, bottom bracket tool (either wrench or press), cable cutter
You'll probably be in a 58cm frame, you can go to real bike shop and do some demo rides to figure out your size.
Either way buying a complete bike or building is pretty fun. So many options.
Do you want a full road bike or gravel bike?
If you don't have the knowledge, maybe a local forum member would help build it or a mobile repair shop (Velofix) will assemble for you.

29er / Re: shifting problems CS-057

The 057 has an internal carbon tube running inside the frame. I had similar problems from day 1, I think I caused my initial issues by trying to drill in plans of installing full length cable. Initially things didn't go well, so I stuck with original routing, but I always had shifting issues toward the top of the cassette.
I recently drilled out the holes completely to run full housing. It was very difficult to get the new housing in place. As someone else mentioned, I think the internal housing may not be strong enough and flexes. There may also be some imperfections that cause drag.
All said, I don't have a good solution

If building a new bike today, I'd probably be going with a Carbonda CFR505. I'd want to build a gravel road usage bike.

There looks to be a bunch of these out there, once you start searching.
As mentioned, if I was allowed to build another bike at the moment, this is what I'd be building.
I'd probably build a hybrid MTB/Road groupset. Probably a mix of Ultegra and XT, essentially an Ultegra cockpit and front mech, with road brakes, then an XT Rear Mech and cassette.
If you build one, make sure you keep us updated.
