I'm still waiting for the release of the new Radon Vaillant (German brand) in March. The geometry is quite close to a Supersix Evo. If the price is as low as it has been so far, that will probably be my bike; otherwise, I'll go for the SC-R55D in 535.

I'm 1.80m tall, but with an inseam of about 87cm, my legs are a bit longer than usual, and my arms aren't exactly short in proportion to my torso. My saddle height is about 760mm.

Currently, I ride a 2018 TCR Rim Brake in M/L (stack 562, reach 398) with 15mm spacers. So, I would ride the 535 with the Light Carbon cockpit with an 8mm rise and a 110mm stem + 10mm spacers.

I would ride the 560 with a cockpit without rise, a 100mm stem, and no spacers.

The riding position would then be almost identical on all three bikes.

I am almost your dimensions (180 cm, ~86 inseam, regular arms) and I have 535 frame with 130 stem and 78 reach handlebars, 10 mm spacer. Coincidentally, I have TCX size ML
You may check my bike few pages back. I will change my cockpit to get extra 10 mm but it is mostly to go further down the progressive-agressive fit, if you are on the more traditional side it is fine as it is.

I think you will be fine with 535 setup, 560 will be very long and you get little to no seatpost exposed. I definitely wouldn't put one piece bar yet, just try separate cockpit if you are not settled with the position.

Yeah, I think 535 is the way to go. This is my second year and I'm slowly getting closer to my optimal position. I currently have a 110mm stem on my TCR. It's pretty much perfect for Zone 2, but for higher efforts in aero tucks, it could be a bit longer.

Bikefitting is a rabbit hole. Im 178 cm, ~86 inseam and im riding 510 frame with 95 stem (which is way too short for me). Because of heel dropping my saddle height is very low and i can ride that bike with slammed stem.

Finally built the bike up, did battled with the internal cable routing ( but that's on me for wanting to use a mechanical groupset and setting up the brakes reversed the first time).
Haven't been able to do a real ride on it, just around the block but it seems way more comfortable that I was expecting, I'm coming from a Look 586 with Cosmic all carbon wheels.

For the curious ones the bike setup is as follows:

Wheels: Tagoola - Aeroraptor 60/50 (1230g)
Handlebar: Lexon thin line 400/110 (320g)

Crankset: Goldix 53-39T chainrings with CRUZBIKE (Titanium axle)
Cassette/Pedals/Chain/BB: Dura-ace (cassette 11-30T)

I also have these bottles and they are a bit wider than the down tube. still looks good though. If you want to maximize aero look, you can mount the down tube bottle lower (there are 3 bolts on the downtube)
and the bottles would be next to each other with only a small gap. But I found the bottles hard to reach in this setup.

Btw did my first ride on the bike, just a small 50km one and first impressions are good, the bike is really comfortable and fast!
Will leave a better review/update once I have more kilometers in it.

I have clocked around 8k kilometers so I guess I can make a follow-up long-term review of my Speeder.

Starting with the caveats:
- saddle clamp bolt position makes it impossible to reach the front bolt with torque wrench and regular head - ended up tightening it by feel
- expander plug provided with the frame is not strong enough to keep handlebars and headset in place - issue solved with buying the longer, better manufactured plug from PRO.

That's pretty much all I've had! No sanding, facing, workarounds and other stuff you may expect from Chinese frame.

The bikes feels great and seems like future-proff allrounder - generous clearance, good geometry, super comfy, quite stiff where it is needed, pretty light and easy to work with. The biggest upgrade from the first setup were wheels and cockpit. I upgraded my older Elites to XMCS 26/33 58mm deep rims with steel spokes and went one size up with the same tires (30F 32R). Wide rims make ride even more comfortable and I will never look back at anything narrower for a road bike. HBR17 handlebars (130x380) from LC were installed mostly to increase re seems like a great upgrade from my 2nd gen The One handlebars (120x380) - 50g lighter, yet stiffer and cheaper. The only thing I don't like is a proprietary computer mount, longer reach could also be beneficial.
I ended up with the final weight of slightly below 7,4 kg with pedals, cages and mounts, which, considering the budget spent and frame size, is great. I will keep the bike for a foreseeable future as I don't see any reason to change it - it is very well made and performs great as a race bike.

PS: the Varia mount suggested by @tgarne fits like a glove - I bet the seatpost is interchangeable with Propel's.

Mine fits just right. You can buy ball end hex bits for hard to reach areas. I usually use those on brake mounts and shifter bolts
