Width matters, but ofc, make sure a modern wide rim would fit in your frame. Ideally you'd run a 33mm rim with a 28 or 30C tyre, for example, but that assumes your frame can legit clear 32C, which is not a given. Either way, consider chatting with Peter, i bought yet another wheelset from him last week, 33mm wide, 50mm deep, sapim cx ray spokes, brass nipples so that my friend never has problems with maintenance, salt, grime and so on, T800, and no holes in the rim bed.
As it sounds you're new to the scene, keep in mind that "nobody" should be riding less than 28C road tyres for a multitude of reasons, and that on a wide rim, a 28C will measure more than 28mm, and that aero wise, rule of thumb, you want the measured width of the tyre to be a bit less than the width of the rim.
And be sure to spend money on good tyres (gold standard being Conti GP5000) with TPU / latex tubes, or tubeless if you're brave, because it's the single most transformative thing you can do to a bike (going from bad tyres to really nice ones). This isnt marketing, it's (unfortunately) true.
