Mixing Road/Gravel/MTB components - will this work ?

I have a pair of R7120 12 speed road shifters that I would like to repurpose for my gravel bike. I know I can mix it with the rx610 and rx820 2x setup but I was wondering if this 1x setup will work:

- R7120 road shifters ( left shifter will become redundant)
- RX822 gs/sgs rear derailleur
- M6100/7100/8100 crankset or rx610/820 1x crankset
- M6100/7100/8100/9100 cassette ( I will need a microspline freehub).
- M6100/7100/8100/9100 chain.

My logic is that the shifters are compatible with the rear derailleur which in turn is compatible with the MTB cassette. Then the crankset and chain just need to be in the same series.

Alternatively, I can lose 1 gear and wait for the CUES 1x11 dropbar to become available.

I don't see why it wouldn't. The Q Factor doesn't matter in 1x, the shifters are using the same 1.4 pull ratio and your whole drivetrain is from the same series. You might need to shim your cassette but that's about it

It's almost like the rx822 RD is the link that connects the road shifters with the MTB cassettes.

You mean chainline doesn't matter?
Q-factor being the distance between the pedal attachment points on the crank arms, it will matter for some people in 1x or 2x

Road and Gravel Shifters and derailleurs are basically the same. You add a little bit of Gravel glitter and then your ultegra turns into rx800 
*there's an ultegra RX raer derailleur by they way which was the predecessor of the RX800.. it already had a clutch.

The mtb shifters are however NOT compatible to road/ Gravel
The cassette mixing is OK. If you consider the capacity of the rear derailleur.
For example: 11speed 11-34 casette from shimano is a mtb cassette, which is widely used in 2x11 road configurations.

Chains are always just the same.. you can see it on the paper box telling you "Ultegra/XT" or "DuraAce / XTR"

Chainline and Q factor: chainline can be OK. There are non boost cranksets in mtb available.. maybe look for them
Q factor is definitely something that should be considered for the rider. Some people don't even feel the difference, others don't like large q factors/ like large q factors

I always like to get in my perspective regarding converting between MTB components and gravel. On my favorite hardtail, that has a lighter frame than my gravel bike, I often swap between rigid and suspension fork, and flat and "H" bar carbon handle bars.   Since the "H" bars are 22.2 diameter, they quickly swap over the MTB brake levers onto the "H" bars, and my Wheeltop EDS OX shift pod.   
- These days, I use my gravel bike for 60/40 asphalt /gravel rides, and the Hardtail converted to rigid fork/"H" bars for heavy duty gravel roads/trails and bikepacking rides.  On the hardtail, I will swap back to the suspension fork and flat bars for long singletrack rides where the trails don't require my full suspension MTB.

MTB cassette are compatible with road/gravel wheelset but you need a washer before installing the cassette on the hub.
I've built my chinese gravel last year with dtswiss road whels and Shimano hg freewhel with sunrace 11/46 mtb cassette, so I need to use 1.85 mm washer

Will work no problem. Be mindful of max cog size.

- M6100/7100/8100 crankset or rx610/820 1x crankset

Will work, may need spacer for the chainring bolts to fine tune the chainline.

- M6100/7100/8100/9100 cassette ( I will need a microspline freehub).
- M6100/7100/8100/9100 chain.
