May I know your height?
I am 174cm ( 5'9") and use a size M frame with a 60 mm Carbonda handlebar. I feel 1 cm short.
178cm, long legs(89cm inseam) long harms.
Everyone is different.
For a coming build, I suggested the guy to go first with a stem+bar first.
UNO stems are cheap to test. And when he's sure, we'll get him the integrated bar.
Cheaper and more precise than a bike fit.

Yes, but you have to get off the bike to reach the lever.
You can reach it while riding, not practical but possible 8)

I carry the electric pump and CO2 for gravel. For my road bikes I just carry the e-pump since I'm running clinchers and TPU tubes.

Important question before purchase, did you get a flat already ?  8)

I'm curious about your opinion and recommendations on Press-Fit vs Thread-Together BB86 bottom bracket shells and especially these two in particular:

The thread together ZTTO BBs I tried were great; however, for that price, don't expect to get quality bearings.
You can replace the bearings with better ones. However, one hard issue, especially in the DUB world, is finding replacement plastic sleeves if you crush them. I'm a tinkerer, so it's fine for me, but if you're not, I would recommend the Shimano one.
If installed correctly with a compound to help it adhere to the frame, it should be reliable for many thousands of kilometers/miles.

Re: Ryet wheelset? Google for any brand with the words "exploded rim" and you'll find some.
Personally I've seen Bontrager and Roval similarly exploded wheels, as well as some of the lightbicycle ones I helped to buy.
It happens, it is the way carbon fails. The most important is the warranty you get when this happens.
All the brand above honor it.
Looking forward to see how Ryet is reacting to that.

Thank you! I was looking at that one. Did you use it with one of the install tools they sell on Aliexpress?

I had a used tool from Wheels MFG for years in the workshop, but I didn't know what it was for.
One day, I found out it had exactly the right diameters to hammer out the bushings from shocks.
Then I use my usual hub press to gently install the bearing into the shock.

I have a Sigeyi on my MTB. XCadey is another one.
However they continuously increased their prices these last years, and I often see good deals on Quarq ones.

Are digital torque wrenches useful? I think they might be more of an "idiot-proof" way to make sure you don't destroy your carbon bike lol

I'm so happy of mine for this exact same reason.
However I'm not sure it should be re-calibrated, from time to time.
I just asked SHAHE about it.
