It's a tough time looking for a frameset as someone being over 2 meters (6'7"), especially in the asian market.
I'm looking for a frameset which will have at least a stack of 610mm & reach 410mm, looking in the € 500-1000 range
Prefferably a more aero oriented frame. And it can be either gravel or road, looking for 2 different builds actually.
So far my best option I have been able to find is the Velobuild Aero Gravel in size XL, perfect for the gravel and decently fast on the road I guess.
Please give me some suggestions as I'm getting lost in the woods of all these frames which aren't even my size.

The Tideace / Mondice / Tantan GV201 Gravel should fit with 602 / 407 and a 580 mm seat tube.

Sp cycle g068/69 is like a canyon grail. XL has 634 stack 435 Reach. I ride 95% road with it and it does fine enough. I had an alloy gravel bike before this one so I don't know what an all out road bike feels like to make the distinction. Their g026 also has large stack/reach figures.

Yeah, as much as I like Chinertown and buying direct from manufacturer: Chinese manufacturers don't focus on offering choices for tall western people.
The Mondince FM126 will meet your reach and stack, geometry under discussion in the thread here on Chinertown.
If I recall the geometry chart, the seat tube is only 545 for size 61...better to verify carefully
Other possible choices you could consider:
Yishun R068-D / Hongfu FM238 / Lightcarbon LCR018-D / Carbonda CFR-505 SL
The Elilee Blize also might work, but it is outside of your price range - might be "easier" to buy western brand sales or second hand local
