I really like the Ryet RT03's I've got on a couple of road bikes and would like to try a similar shaped saddle on my main mountain bike, but I'm not sure I trust carbon rails for this use. Is there anything similar with metal rails without spending more on a Specialized Romin which it seems the RT03 is a copy of.

I havent heard of saddle rails breaking for many, may years. I wouldn't use a carbon road saddle marketed as ultra light on MTB, but i would use a "regular" Ali carbon saddle for MTB.
If you break it fast enough, you can get aliexpress customer service to step in, so you have an incentive to stress test it heavily. If it holds on, it will probably last forever.
Edit: saw a picture of you. You're carrying a few backpacks worth of excess weight, forget what i said. idk how saddles behave at these weights.

I've not damaged one for years but a mate did very cleanly bend both rails on an Ergon a couple of weeks ago. I did have the idea in my head of lots of sharp bits of carbon near my bits if it failed but doing an image search that doesn't appear to be the normal mode of failure. I'll have to try swapping one over to see if it's actually comfortable with the different position on a mtb.

I too have been using a full carbon ryet ultimate on my hardtail MTB (without a dropper). I do mainly XC riding, but have hit some drops and jumps and have taking a couple of spills without any issue.
