I'm exactly the same height, weight & inseam (freaky right?) and I have ordered a 56cm based on my existing bikes, knowledge & research. Completely happy with the choice. Granted it hasn't arrived yet, but I'm confident it is the right size for me.

i'm 188cm and 87cm inseam. i got the size 56 and lexon thinline bars with a 100mm integrated stem, and a seatpost with ~20mm setback. i used about 3cm of headset spacers. The fit is pretty good. i do a lot of climbs and i can sit up quite straight with my hands on the tops. If you prefer a really loooong reach then you might need to size up or get a longer stem.
