I'm in the same situation with 1,84m. Lightcarbon recommanded me 54 without any doubts:
"Engineer Verdict & Complete Optimal Build Spec (Comfort-First) for you:
Best selection: LCR018-D Size 54  (56cm is not recommended)
Seatpost: 15mm offset
Cockpit: HBR17 integrated bar with 110mm stem length, 10mm total headset spacers (2×5mm)"

well, which of the 2 existing bikes do you like more and why? 

which issue (stack or reach) is most important or limiting?  usually it's stack, so i'd pick the size of the LCR that addresses that issue best.  and then accommodate for the other (reach) with bar choice.  so if stack's the priority, then pick the LCR size that matches the stack you want and you can shorten or lengthen the reach with a shorter or longer stem bar.

asking what random people on the internet picked, even if you're the same height, may not be helpful since everyone has different flexibility, longer arms vs longer legs, preferences, etc.

but your plan for a 56 sounds reasonable

I'm 183cm, and have the 560. Feels perfect.

58cm frame, raw carbon matte finish
36cm LC bars
XMCS 50mm (26mm internal) wheels
35c conti GP5000S tubeless
SRAM Force E1 2x12
Ultegra rotors (because I just don't get on with sram rotors)
Ryet saddle
Elite carbon cages

I've got a zero offset seatpost on the way, and some silver LightCarbon decals that I might put on.
Frame is really nice for sure, definitely the most premium feeling and looking chinese frame i've owned.

Not sure if I like the bars yet and kinda wish I used my leftover Balugoe bars. Especially the computer mount is a bit shit, wobbly and angles the computer away from me so there's a glare - any alternatives? (EDIT just read the post 3 posts up!)

Also, I've spent the summer riding my Tideace gravel bike mostly on-road with 13s Force, and I'm kinda regretting not getting 1x13 for this bike.
