Help me choose and decide my first carbon bike frame

First of all let me introduce myself !
I am 24yo riding bikes for a long time but with real involvement for 5 years now. I am volunteer in my city "participatory bicycle self-repair workshop" i.e I help ppl who don't know bikes fix theirs. I ride around 5'000 km per years on two bikes. I have been reading you for a year now and I must say it has been a real pleasure to find both informative and really funny stuff here !
The two bikes I ride are on the pics attached below
The blue one is a steel frame cilo from late 70's with reynolds 531 tubes. I built it with some new parts and some less new. It can handle 32mm tires and the ride is absolutely perfect for commute and bike packing.
The grey one is a scott speedster s60, aluminium frame and carbon fork, from 2008. I changed pretty much every part on it with parts I had from friends, aliexpress and the workshop.
I am 180cm tall with a 84cm inseam and the scott is a Small 52cm frame. I had to adapt to my geometry but it rides really good now.

I am now looking for a new bike. I want to built it myself as I have both access to all the tools and the knowledge need to do so.
I am no expert in carbon fiber frames and therefore need your help.
I have no idea how carbon bikes behaves (both forks frames and wheels).
What I want is something comfortable, reliable and easy to fix.
I want to build a bike with mechanical 105 12s and be able to fit 32mm tires. I also want the frame to have the routing semi-internal i.e no housing through the headset.
Frames I consider are the 1056 and 1136 from carbonda. And a high point is that calling my local decathlon store they said I could buy the NCR CF frame as "spare part" for a good price (less than 1000usd for frame + fork).
When it comes to the wheels I have really no idea but I will probably build them as no one is selling wheels with j-bend spokes.

If you have any advices concerning carbon frames forks and wheels (maintenance , ride feel, durability ,etc) just feel free to help me in my journey :D
