I am looking at the AR56s (56x30, ~$650) or the WR50s (50x32, ~$850) for a road disc build with 30mm tires. Trying to stay within the 105% rule to max out the aero benefit and find something 32mm wide and ~55-60mm deep closer to $600. I have seen a bunch of 32mm wide gravel wheelsets but they only go to ~45mm deep. Just trying to see if anyone knows of something 55-60mm deep and 32mm wide for $600-700 or so.

Farsports do, at least with their wave series. You can customize them if you email them, so with the right hubs and spokes, you're within budget i think.
Winow has the attached specs on 50 & 60mm deep, I asked for the widest they had. I got a cheap quote using powerway hubs. I've had Bitex & Novatec in the past, it looks like Powerway is cheaper and lighter, it looks suspicious to me (I'm ignorant, to be fair).
Others probably do too, this isn't claiming to be exhaustive in any way. In fact, curious for others to chip in too!

Btw, light bicycle have rims called Falcon RIM WR65 that are 32mm wide and 65mm deep.
I've been riding 69mm Farsports wheels, I'm about 82kg, I wouldn't advise anyone who's very light to descend on such deep rims, when there's cross wind and you're going fast it's sketchy.

Nextie ARX are another option worth looking into. They are front and rear specific profiles which is kind of interesting. There is a 49 / 54 and a newer and wider 60 / 65

I personally really like the WR50 from LB (i have had the flyweight version for as I weigh like 55-56kg) and have kept a pair over the course of a few years as many other wheels have come and gone. Not sure that build though fits OPs budget.

One thing to think about is that wheels sort of became a commodity for a while as everyone settled more or less settled on NACA profiles. I don't think that has been the case for several years and the brands pouring in the R&D are making better products. For example my Ascent Polaris 69mm deep wheels are significantly more predictable in crosswinds and faster than than my LB WR50. On the other side, I think my Roval CLX50 were faster wheels than my LB WR50s are; though they were hell for me to ride in crosswinds which is why the WR50 stayed and those went.

I just stumbled across another brand today- BTLOS- anybody heard of them? They have some 31x54mm rims that fit the bill:

It's interesting that they disclose the mix of t700 and t800, I can see myself asking other factories the same question.
Haven't heard of the brand before, but I thought U shape was ubiquitous because V shape was terrible in cross winds?

These are the wheels on my chasingwind gravel bike and are awesome.  I got 40mm depth by 29mm wide in 12k finish.  I also have a set of there wheels on my Marin rift zone 3. They use straight pull spokes and a their own hubs but they have been as solid as the 2 pairs of lightbicycle wheels I have.
