tbf those dimensions arent absurdly small. theyre just small for me, whos 6'7.

This is such an oversight by Velobuild tbh. The 168 and 177 are clearly homages to Specalized designs so why not make the forks, seatposts and hangers the same as their name brand counterparts? it'll save a lot of hassle in the future when they're no longer produced and you need to find spare parts.
Dengfu got back to me at $500/set for their FM128, quite a good offer however im not sure about the quality, heard DengFu and Hongfu tend to have Fork fit/Seatpost fit issues.

Would you say you prefer DT Swiss hubs over others?

Shame there isn't a more standardized way of measuring frames. It seems to vary from brand to brand.
Also...Winspace Hyper wheels can be had for $1200. Several 10% off codes exists which basically covers fast priority shipping. So $1100 USD shipped for DT Swiss 240 laced wheels in a very modern width isn't terrible. Having an easily serviceable hubs is good thing too. The main hurdle is brand awareness.
