Thinking further - look for thin disc's....off the top of my head I know the quaxar iris I have I chose initially because they are light but also because they were thin (1.7 vs. a lot of discs are 2).  I was initially wanting a set of Formula R1s.

Don't know anything about question 1 - leave that for somebody else...though I have never heard of anybody doing that....that sounds like old stuff.

Question 2:  don't remember your fork, but if it is carbon....most recommend a limit of 40mm and depending on your spacer size you may want to go above and below.
Othwise, do it either way and see how it fits ya....I personally like it 'slammed' but most bikes have 10-20mm below....above doesn't look right.

Those should be long enough for a 19" as new brakes usually come with 1600 and 1000 front....front may be close
If those are 2012 or older you may think twice about them....very little tolerance for brake disc in the caliper

Think I see an issue.  Your SLX hubs are centerlock - meaning, I think, Shimano proprietary connection for brake discs.  Your disc brakes will need an adapter since they are 6 bolt.

direct mount - means it connects directly to your brake...it removes some adjustability....pretty much you can slide it left and right.
It is liked because it cleans up the bar - no separate clamp for brake and shifter.
With Shimano, you can get into trouble because they have changed their direct mount style...so that needs to be looked out for.

Looking good.
I took the rim stickers off my Crest rims - just looks better towards the 'murdered out' look
With your white fork, I might leave them or get them painted/stickered to add to the white....so the fork isn't the only white piece.(there was a topic about getting the rims painted somewhere though they were talking about carbon ones)
Your whole wheelset was 170.00? or one wheel?
I see blue on your pedals, post lock and a blue head badge?

Some of those prices are crazy to me.
This is where it is time for give and take related value or for some durability(but this is WW talk for now)

Something not mentioned here for lighter weight...racing tires....like Stan's Crow or Raven? or the new Schwalbe Thunder Burt....this would put you in the 16lbs range.
Again, will be interesting to hear your thoughts on the lighter weight in your races...I say this because we probably carry more weight that could be shed.
Short race...an hr or less, one shouldn't need much liquid during the race...but we have giant water bottles(or 2) or a camel back.

there is a picture of a fork with a tire in it(not sure of the fork model)....but it looks like it would work for fat bike nearly...I'll see if I can find the picture and the model.

The 57 and 256 are both popular as they came out and iPlay seemed to be the main vendor for them as they were released.  Plus, Peter has been active on this and other sites(good marketing/promotion works) 
As to the frames, not many, if any, stories of broken frames related to the 57 or 256(some other frame yes).
