Why not recycle everything but the frame to build the next one?

That's the backup plan this would be a third bike I'm ordering from tantan, so they'd give me a small discount. I wanted to pass on those savings and get a fully outfitted Di2 setup with DT SWISS 240 (54T) hubs. I've never built a bike from frame up, but it's something I'm considering.

I think you need to lower your expectations, as tan tan sells the pretty much same complete bike brand new with Di2 for the same price
