What is your size suggestion for 172 cm and 81 cm inseam? Hesitate between 49 (with 10 cm stem) and 52 (shorter stem I guess).

Can anyone share pics of ready bike in size 49?

I've found shorter stems can make descending a bit twitchy, so I'd suggest the 100mm stem and work back from there, hence the 49 perhaps? SPC will also advise you  ;)

This will depend on your flexibility but I'm similar to you here except 82cm inseam and I ride a 52 SL7 with a 120mm stem and saddle at 705 mm from BB with enough seatpost showing.

Looking at some shoes, for wider feet. Does anyone have any actual experience with those models, and their fit?

I tried a pair of the Hyper City Sports (lace-ups, not BOA.). Good fit, dimension chart seemed accurate, so fairly wide, but also pretty poor durability (the upper scuffed through where it overlaps the bathtub sole after <1000km). Your local pricing may vary, but at least where I am they're no cheaper than Bonts on closeout.

Sidebike are reputed to be fairly narrow (well, normal for cycling shoes) but no personal experience there.
