Sorry to dig this back up but interested in further thoughts please

Having just bought a second hand 2015 Canyon Ultimate for a good price it comes with separate Alu bar and Alu stem (non Canyon) and i would like to explore my options for all in one carbon one

The Canyon ones H36 and H31 have channel;s cut out below but on the ones shared above its hard to tell if that is the same?

Currently run Clincher tyres on my alloy wheels and keen to pickup some Elite BWS wheels and use my existing tyres to start with. Then keen to have the option of tubeless in future

Messaged the seller who said if i choose clincher they can't run tubeless but if i order tubeless they can run clinchers also. Bit confusing for a noob like me! Are there any downsides to this option?

Lastly is the extra $100 worth it to go for a DT Swiss 350 hub?

More general question - having previously lived in TO I couldn't imagine commuting via bike with the streetcars and poor drivers. You are brave!
