Hub: DT Swiss 350 or 240
Axle Hub Front: 12x100
Axle Hub Rear: 12x142
Freebody: Shimano 10,11,12s
Brake Interface: Center Lock

I am not familiar with good Chinese wheel manufacturers. Can anyone recommend a manufacturer?

direct: Yuanan (contact in some thread here), XMcarbon (peter), light carbon
aliexpress: Elite wheels (made by Yuanan), GoZone and a few others

Lots of options these days. What's your budget?

Very unlikely that you will get DT Swiss hubs in that budget, you'll probably need at least 800 EUR to get a good wheel with DT Swiss 350s. Consider one of the recommendations made by Ludo above with house brand hubs.

Nextie have by far the best choice of gravel rims.

Total weight: 1508g±5%

Peter (XMS carbon) is almost unbeatable if you're looking at good quality for a low price.
My personal favourite is https://www.wheelsfar.com/gravel-c0374. They also can make custom wheels like with their own dt swiss stile hubs which are very light.  Once you start chatting with them, they can give you some options.
