Looks great! Very close to what I'd like to do, when finances allow.
About the weight, if you're not happy with that, the wheels at 1750 grams seem to be the biggest offender. In contrast, a pair of 9Velo Road Disc LV 2.0 Series 24H/24H in 45 width weigh 1309g, nearly a pound lighter at about $1000 usd.
Moving away from the all season version of the GP5000s, and down to 30mm would save another 150g and would likely measure 31-32mm once inflated on a 21mm internal rim such as the 9Velo.
TPU tubes, if you haven't already would shave another 140g or so. If you chose to do all of this the weight would be closer to 7.56kg or 16.6 lbs.

I finally assembled my night rider 
Frame: LCR017D - size 56 (i am 182cm)
Wheels: Elitewheels ENT 2.0 50mm
Groupset: Shimano 105 mechanical 12speed (just upgraded rotors to Ultregra ones)
Seatpost: Ryet 3D printed
Pedals: Oniri PD-06
Tyres: GP5000 32mm AS TR
Full build was around 1600 EUR (some import tax for grupset to Slovenia), and bike weight with pedals is 8.3kg (to be honest i expected a bit less, but i am guessing i ENT wheels are not among the lightest?) Anyhow very happy with the bike
